When watching some replays ie the Djokovic match there is a line of tennis balls across the screen, kinda like a watermark on documents.
Anyone have any ideas as to why or how I can remove it?

Good question. It's very annoying. And it's similar on the football coverage with timelines which won't go away.

It is shown on replays and when using the Watch from Start, during a live match.
When playing the match, just hit the dismiss key on your Sky remote.
Make sure that you have dropped down to the pause/playff/rew bar, below the timeline, when doing dismiss, otherwise you may drop out of the match.
Discovery have beeen doing it like this with some of their other Sports for sometime, it's not unique to the Tennis.

They seem to be there to watch hot shots, break points etc. They were annoying me too but I found a way to turn them off by pressing on the rectangle with three balls on the right hand side of the screen.
