I've tried setting up my phone this morning. Surprisingly it has worked first time. Hopefully issues we were all having yesterday have now been resolved for everyone.

Yes I tried my watch and verified 1st time too, I'm wondering if Sky servers were seeing the abnormal volume of apple traffic as some sort of cyber attack or something causing a throttling. Either that or they fixed something!

After eight hours of trying yesterday, it finally worked in the evening. I didn't do anything different, it just worked. 
A particularly horrible first experience of something I was looking forward to. 
If Sky was somehow the cause of this, I hope they have it sorted out.
