Set a spend cap of £40 for my daughter travelling in Thailand yesterday, yet today i receive a text message saying the limit has been reached already? How is that possible when it shoiuuld be £2 per day?

It isn't £2 per day as "Rest of the World charges" apply as you can see here:
https://www.sky.com/help/articles/sky-mobile-roaming-destinations-and-charges
So it is:
£0.36 per MB (not GB) formobile data
£0.72 per minute to calls to UK mobiles and landlines
£0.14 for receiving a call.
£0.14 for texts to local and UK mobiles
£0.58p per picture message to UK mobiles.
So your daughter could burn through this quite quickly.

Thailand is not included within the £2 roaming passport. (Only EU and some other territories are included within that passport)
It's a 'rest of world' location where you pay per use:
36p per MEG of data
72p per MINUTE to call UK
14p per MINUTE to receive calls
14p per SMS
