Sim card
Her phone broke so she is without one and I am still paying for the sim. How do I get it switched off

Why can't the sim be put in a replacement device?
Otherwise, so long as she's had it 12 months or longer call Sky to cancel it. You can't cancel it here or online.

If you do manage to cancel the sim then the number will be lost so any subsequent sims ordered will have a different number.
