Sim card
If I order a new sim card can I swap the new number over to my existing contract or not?

If it is another Sky sim card then no you can't move the number between the two sims.
You could either use the sim you have or if you want to transfer the number you have to the new sim then you would need to use a Pac code to transfer your current sim number to a PAYG network and then use another pac code you get from them to transfer it back to your new Sky sim.

So I can't transfer from a sky sim to a sky sim it's just I have a contract but I'm having trouble at the moment so I'd really like to have a new number

That is correct, you can not use a pac code to transfer a number between two Sky sims and the pac code itself is used to move numbers between different networks.

If you want a new number then order and activate a new SIM and then cancel the existing one (assuming you're not subject to a minimum term - 12 months for dataplans)

Only by calling Sky on 150. Ensure you activate a new SIM before cancelling.

If you didn't cancel your old sim then it might be you ordered your new one on a different account, call Sky on 150 so they can look into this for you.

You need to call Sky if you want this other sim card cancelled.

I know I need to ring them but where has that SIM card information gone from my
account because I ordered my new sim off the same account I already use?
