Today my phone would not accept the PIN into the SIM. I have unlocked it via a PUK code but am concerned that someone has tried to take over my phone number and if there are any safety checks I should take out.

Hi @TedsBark very unlikely anyone can take over your iPhone especially if you have been able to change the pin to a new one. What makes you think it's been taken over ?

I guess I am just worried that the sim wouldn't unlock this morning and yet I know the pin was correct and worked everyday previous. I'm hoping as it's a physical SIM and I've reset the PIN there isn't a problem but wonder if there is anything else to do or is there a simple explanation for the sim locking out.
