Roaming charges whilst using a third party eSIM abroad

I am planning to buy a third party eSIM for data roaming whilst in Greece ( Saily  probably). 

My sky fair use limit of 25gb was completely used up by my Son who is on the same plan as me so I now need to use the eSIM to avoid penalty charges from sky. 

Question.   Will sky recognise that the data I am using in Greece is not via the Sky sim but via Saily instead.  

My objective : to avoid paying for a third party Sim but still get penalty fees from Sky.

The 25GB limit is per dataplan.

Not if you ensure the 3rd party SIM is connecting to the cellular rather than the Sky SIM.

I am just another Sky customer and my views are my own even if you don't like the answers
