I've starting a new deal with sky and had problems with set up and been told I've been sent a smart watch ,but a iPhone 17 turned up ,is this a scam?

@Andy479 yes. You're likely to be asked, at some point, to return the iPhone using an address or a label the scammer gives you. It won't go back to Sky, but be sent to the scammer leaving you to pay for it.

I'd suggest contacting Sky straight away to report it - see their help here and contact them via the buttons at the end of the help guide rather than any number you may previously have been given: https://www.sky.com/help/articles/account-takeover

Was the new deal initiated by an call to you from someone claiming to be Sky?
