On my phone I somehow have two phone numbers my personal number which ends in 512 and a random number which ends in 281 sometimes when I ring people it doesn't come up at me and instead it is this random number and sometimes it does come up as me

The random number might be the number that came with the sim so can you set your number as the primary one ?

If your phone is an iphone then go to Settings > Cellular (or Mobile Data) > Default Voice Line or Cellular Data.

Yes it is a iPhone and I can get onto mobile services where it says sky and I'm able to edit the number but it won't let me save it

Try refreshing the network settings so go Settings > General > Transfer or Reset [Device] > Reset > Reset Network Settings. Then go to Settings - Phone - My Number and change it if it is wrong, then reboot the phone. You will need to set up your Wifi connection again.
