I got a new iPhone 17 pro and got the eSIM everything transferred and got email to say it was completed on the 10/11 however my contacts are getting txts from the new devices number and my old number at the same time I have tried following the links turning the phone off and on etc with no success

Try refreshing the network settings so go Settings > General > Transfer or Reset [Device] > Reset > Reset Network Settings. Then go to Settings - Phone - My Number and change it if it is wrong, then reboot the phone. You will need to set up your Wifi connection again.
