New phone transfer

i am at novice at these thing.  I am getting a new IPhone 2moro , how do I transfer everything from my phone to the new phone and also the same number as now getting an ESim.

The phone contact is from Sky to Sky so hoping to should be easy , but I need to transfer everything  across like notes and favourites

Both I phones , and yes I woukd like to keep

You can move the sim from your old iphone to the new one to keep the same number.
