I'm trying to buy a new mobile contact but the website keeps freezing and won't proceed to the checkout page. It's been doing this since Sunday and I've used multiple different devices to access the website

Have you tried using different web browsers across these devices, if you have and the same happens then all you can do is to call Sky to get this order placed.
