So if you have 50gb or even 100gb of data and save some for your piggy bank, how will it work for someone with unlimited data.

If you mix from an Unlimited Data plan down to another data plan, you will start to roll data to your Sky Piggybank from when your new plan starts. The 'unused portion' of an unlimited amount would itself be unlimited and so banking it breaks the fabric of the universe (as your namesake might appreciate ; )
