ESim not activating

Hi.

So we got our phones in Dec/Jan - when they were both received / activated - It appears something has failed when activating the e-sims, I got a bill from EE and Sky today which made me aware of this. So I tired again to do this today and the links have not worked (initially) and now are no longer active - this has removed my access to EE so I am without phone signal - can anyone help?

Am I able to escalate this to sky? I am unable to chat until 8pm and I have no signal?

I got my new IPhone in December too and had mobile access perfect but suddenly I can't use my phone outside at all... it won't let me link on to mobile anything...
