If I set up my I pad pro m4 with an e sim sky mobile can I then roll back data from my sky mobile I phone 14 pro

Yes you can as an esim is just a replacement for a physical sim so your piggybank data plays works in the same way.

Hi @jimmy1946 not exactly, any unused data from your iPhone will go into your piggybank at the start of each new billing period. You can roll data from your piggybank to other sims (esim or physical) on your account. You don't roll data from your iPhone.
