I was wondering if there is a way to keep my old number from my sky SIM card to my new sky SIM card ?

Not easily.

You cannot port between SIMs.

The workaround is to port the number out of the network and then back to the new SIM.

I am just another Sky customer and my views are my own even if you don't like the answers
