If you use a pac code then your mobile number can be transfered from your other network to Sky, it is then up to you to make sure your account with them is closed and that either you don't owe them any money or if they owe you a refund.

Buy the Sky sim
Activate it when it arrives but do not put it in your phone.
Get pac code from your current supplier
Give Pac code to Sky
When your current sim stops working insert your Sky sim in the phone.
