@Unknown2525-- You cancel your existing SIM, if it's not in contract, and order a new SIM.

You can only cancel a Sky sim if you have had it for 12 months or more but either way the only way to get a different numvber will be by ordering a new Sky sim on your account.

If you haven't had your current number for more than 12 months Sky won't change it unless you're receiving threats etc which have been reported to the police and you have a police reference number.
