Cannot change number - new SIM in iphone

Migrating my number from Vodafone I dropped my SIM into my phone today after getting the confirmation porting was successful.

At first it was still mid-migration and within an hour it was receiving and making calls on my old number.

The problem is I cannot change my number in the settings of my iPhone , every time I hit save and exit it shows the sim number. I've done the change, save, reboot and it's still not correct. I thought it wouldn't be an issue but messaged my wife and she asked if I had a new number. Thing is, I've messaged and called my work phone and it's showed up correct: 

why can't I correct the number stored and why is the number correct to one iPhone but incorrect to another?

Hi @JPS12345  try requesting the network settings from sky.
