Can I start watching Sky Sports now even though I'm waiting for my sky glass tv delivery to come on Monday morning,

Normally, yes. Whilst your order is being processed Sky normally gives "pre-activation" access which includes everything available on Sky, including things not in your package. Then, when your main subscription kicks in it changes to reflect what you're actually paying for.
Some devices, like the Apple TV box might not work because they require an active multiroom/whole-home subscription or equivalent.

If it is possible to do this (and I'm not sure if you still can do this or not) then you would need the Sky Go or on a mobile or tablet only - the Sky Sports app.
