Two Step verification

The two step verification code goes to my old phone number. A) how do I change it and B) I haven't a clue what the recovery code is. How do I access my emails?

When you set up two step verification both onscreen and in the email you were sent was a recovery code as you need to login to your emails before then logging out and using this recovery code to turn two step off. This will then allow you to set it up again with your new phone number.

If you don't have a separate note of the Recovery Code, you'll have to call Sky, I'm afraid. They can remove 2 step verification for you, but they quote a 21 days timescale.
