Which of the below would you recommend for better security against 3rd party spy tapping into home wifi -(sky with an old router)? :

No security is absolute: a key is to figure out if you are facing a state level actor, a well resourced financial criminal operation, a bored teenager or an entirely notional threat.
Not using WiFi locally reduces the potential attack surface significantly if you think North Koreans are parked opposite the house.
There are still multiple theoretical attack vectors in applications, operating systems, websites, the other end of the conversation and points on the way: the question is who would bother exploiting them in any particular case?

Not using an 'old router' is fairly important if local WiFi is in operation though: WPA2-PSK is the minimum, WPA3 preferable.
