I upgraded to Sky's gigabit internet a few weeks ago but with the new router I am only receiving around 28-30Mb/s download speeds on my fire stick in my living room. Do I need a booster or is there anything I can do to boost the signal myself?

You may need to buy a longer cable from the ONT to the hub but these are standard Ethernet cables so easy to buy Cat5e supports gigabit speeds and up to 100m
In practice a 28Mb/s speed is more than adequate for streaming video in UHD from a Firestick assuming you are measuring the speed on the Firestick itself. Netflix recommend a minimum of 15Mb/s for UHD personally I go for 25Mb/s because stability is as important as bandwidth to prevent buffering. You can probably improve the signal strength a bit by using a short HDMI extension cable so the Firestick is not behind the TV which blocks a lot of the signal as it contains metal.
