A few months ago we noticed work was going on with the phone cable in our village, and more recently we've realised our Wi-Fi is really laggy or sometimes doesn't connect at all. We get better signal on our phones if we turn off Wi-Fi and use mobile data.
it's getting a bit silly now and after turning things in and off again, many times, and ensuring everything is ultimate on software we are running out ideas.
Can anyone help us get back to a good online service. I've heard BT open reach can be better? (we don't have cable in our village)

Sky uses the Openreach network. BT is another ISP using the same network so any local issue is likely to be the same.
