Just upgraded to sky fibre today and our guaranteed speed is 500mbps but is seems slow so when I do an online test through the speed fast website it's between 10 and 50mbps! Am I missing something?

The 'guaranteed minimum download speed' is for speed arriving at the router from the internet over optical fibre. If you are testing using a wireless device then your result is for local WiFi, not broadband speed.
The wireless speed Sky 'guarantees' for Ultrafast+ and Gigafast with a Max Hub in use is a whole 25Mbs.

I am testing it on website fast.com which sky tell you to useing my phone as told by sky. Im guarenteed 500mbps. Standing next to the hub I get 360ish the next room over I get about 130ish then the next room i have a sky Q mini box I get 44 if I'm lucky. My sons PlayStation won't work because it says it doesn't have enough service
