Latency Issues

I have massive latency issues when playing games and SKY refuse to do anything about it. The ping spikes are frequent (Every few seconds) and constantly go from a base of around 20 to sometimes over 1000. SKY keep saying there is no problem and it is the game servers at fault but I have no issue with the servers on my friends or relatives non-SKY internet on the same hardware. How do I convince SKY that this is actually a problem and get them to fix it?

The problem is worse during peak times but the issue I described is constant throughout the day and I am connected via a Cat 8 ethernet cable directly to my router.

With difficulty, I'd think, because ISPs typically don't advertise any claims about latency.  If you can dig something up about your particular Sky Broadband product being suitable for gaming then that might help.
