Just agreed to upgrade to Sky Full Fibre 150. Next thing, I got an email from Royal Mail saying a pakage was on its way. All I received was a cable. Is that right? Will the Open Reach engineer bring everything needed for installation on the day?

That's the 'Conversion Kit' for use where a current Sky subscriber on ADSL or FTTC broadband already has a Sky Broadband Hub (SR203) and doesn't wish to add the WiFi Max subscription supplement to get the newer Max Hub.
The FTTP installation will involve bringing a new optical cable to the outside of the house, mounting an external splice point (CSP) and then a fibre pigtail to the internal Optical Network Terminal (ONT)
The ethernet cable you've received goes between the ONT and the ethernet port marked WAN (Wide Area Network) on the current Hub.
