On some series I can watch the whole thing without waiting for the next episode & some I can’t.

The BBC in particular tended not to release episodes before aired although they do it sometimes now.
Other channels vary in how much they release up front or wait until broadcast
Some key series are always likely to be held back until broadcast in the schedule

Some content creators prefer to have the audience eagerly anticipate the next episode rather than binge a season in an on-demand stupor: you know, how 'watercooler' television always used to be...
For prestige items (Game of Thrones, Line of Duty) this is also preferable for press coverage, viewing figures and potential commercial returns.
The linear broadcast channels (remember them?) tend to use weekly release to populate their schedules otherwise they'd risk being entirely full of what are technically 'repeats'.
