I am about to sign up to sky, will they cancel my current account with other provider (BT)?

Telephone and broadband, yes. TV, no.

As you cannot have BT TV without BT broadband, I would imagine that would cease as well. I wouldn't tell BT that are leaving, as that will mess up the switching process.  Leave it all to Sky. If the TV continues afterwards, then contact BT.
