No way to just cancel Netflix?
I am taking out a new phone contract and I get Netflix Premium included. Is it correct there is no way I can remove Netflix from my Sky Stream bundle and reduce the payment?

You can downgrade to basic with ads if you are on a higher tier at https://www.sky.com/mysky/tv/tv-packs
And you can create a separate Netflix account and use your phone providers package and then log into that with the Sky app.
But I think Netflix access is "baked in" to Sky Stream plans, even the essentials package.

On Sky Stream/Glass the Netflix standard with ads tier is free.
It cannot be removed.
If you have selected a higher tier for Netflix (paid via Sky) in your MySky, you can reduce your tier there to the Netflix standard with ads free tier.
If you wish to use your other Netflix, log out of the Netflix currently on each of your Sky boxes and login with your other credentials.
