Possibly because those programmes a) have been made, b) are available on the global television market and c) attract a wide audience?
I'm sure a great many other artists deserve a documentary, but this doesn't mean it's possible to raise funding to shoot one, or that channel commissioners would pick it up.

Sky Mix is a free-to-air channel from Sky, I would suspect it's like a showcase channel to other providers (e.g.) Freeview to showcase Sky programming.
