Looking at moving from Q to Stream so that I can get rid of the dish/cables.
The only thing I currently record is the F1. I understand that if it's still on, I can do a 'watch from start'. However, if the program has finished, how long will I need to wait to watch the race on demand?

It's impossible to give a 100% accurate answer to this question.
F1 appears to be something of a frustrating experience for Sky Stream customers, judging by the lengthy threads on the topic.
There seems to be a recurring inconsistency of when (or even if) a full race will become available to watch on demand.
If availability of a full F1 race is important to you, and the ability to watch it when you want, then sticking with Sky Q for a bit longer is probably the best advice.
Sky Stream is great for most things on demand, but watching live sport at any time other than live can be problematic.

Sky Stream is absolutely useless if you want to watch replays of live sports games or races. You'll do a series link, and then try to watch a race/game the next day or later in the week, but it will be missing in your Playlist. And the most frustrating thing is that sometimes it will be missing and sometimes it will stay in the Playlist. This is despite the Stream box telling you that the race/game is being added to the Playlist whilst it's happening live.
I've had this issue with sports missing from my playlist for a year now. And I'm still waiting for a proper explanation or fix to the glitch. It doesn't seem like it will ever be fixed and the only excuse I've got so far is that Sky only has the rights to some sports. But there will be one Sunday Premier League game in my Playlist, but the other Prem game from the same day will be missing. Yet there is no reason for Sky to have the on demand rights to the City-United game, but not the Brighton-Palace game.
On Amazon or Discovery+, you can go back and watch full-length replays of sports weeks after they took place. Yet Sky doesn't offer this for some reason. So if randomly a sport is missing from your playlist, then you're knackered.
Honestly save yourself the pain and frustration, and don't bother getting the Stream box. It's rubbish
