I have an engineer visit booked for Saturday February 15th to install Sky Q TV but I'm trying to change this. I can't do it via the MySky app. It says there are no dates available to reschedule. Sky customer service are no help either when I ring about it.

If there are not any alternative dates there is not a lot you can do apart from cancel it.
