Be aware that Cape Verde is a Rest Of The World destination so the £2 per 24 hours roaming fee does not apply. It will be very very expensive to use your Sky sim there.

Someone who's a frequent traveler may be able to offer more or better advice but you need to turn roaming and data off before leaving the UK because if not then as soon as you land your phone will connect to the local network and start using expensive data very quickly. You then need to buy a local SIM card to use whilst there.

Hi @Heleahy22  this is what I did in Cape Verde. Turned off roaming and mobile data then turned on flight mode before leaving the UK. Don't wait til you are in the air or landed. Once there turn WiFi only back on (keep flight mode on) then connect to hotel WiFi etc when available. Use WhatsApp, iMessage or similar to stay in touch.
