Taking payments when contract has expired

Sky have continued to take payments from my account even though my contract has expired and paid in full. 
I am unable to cancel as according to Sky I no longer have an account to cancel. 
Absolute sham.

Are they taking the payment for your paid off device or the sim or both ?

If it was a dataplan then it does not 'expire' until you cancel it.

They're taking the same amount they always have, for both the sim plan and device. 

I can't cancel anything because they say there's nothing to cancel 😂

I don't just want to cancel the DD in case I'm slapped with a 'missed payment' on my credit score.

You will have to call Sky about this because if your account says the device has been paid off then only by speaking to them can you get this looked into.
