On the sky mobile page and under my sky vip page, there are deals showing for SIM cards (i.e. 5GB data for £5 per month) but when I try to change my existing plan, the offers are not coming up?

Alas they're only for new SIM card purchases & not for your current SIM. You could phone sky to ask if they'd be willing to add the deal to your current SIM.
