I rolled data from my IPhone 14 to a new IPhone 17, but have now decided to return the IPhone 17 during my cooling off period. How can I roll that data back to my IPhone 14, before I return the new IPhone 17?

Data is rolled to and from the Piggybank not from one mobile to another.

...and data is assigned to dataplans/SIMs and not the phone itself.

I am just another Sky customer and my views are my own even if you don't like the answers

The data is rolled to the sim so returning the phone does mean anything happens to it unless you also cancel the sim that is in the device.
