I've just received a new iPhone fro you buttheres no setting up instructions also my old plug from my iPhone 7 won't be able to be used to charge it

Usually after turning the phone on your taken through setup (language, time & date etc) eventually showing the choice to restore the phone from a backup/iCloud, transfer from your current iPhone via Wi-Fi or setup as a new phone.
Have you signed into your iCloud account?
What are you seeing onscreen?

Typically Apple expects customers to switch on their shiny new thing and follow screen-based guidance: there won't be any setup instructions from Sky.
Apple (and Samsung ) no longer ship chargers with new phones: there's typically a lead in the box intended to convert an older transformer plug, or you'll need to source a suitable unit yourself.

If you need a new cable you will have to order one yourself as the likes of Apple no longer supply them.
