New e sim contract
My sim contract is up and id like to switch to an e sim and get a new contract in place.

You can switch to eSIM at any time. https://www.sky.com/help/articles/esim-sky-mobile-convert-sim

and get a new contract in place.
Not sure what you mean by that. You current SIM contract continues until you take action (it does not 'expire').
If you're happy with a new phone number then simply order a new dataplan, activate it and then cancel your current dataplan.
If you want to keep your number then you have to contact Sky to negotiate.
I am just another Sky customer and my views are my own even if you don't like the answers
