I forgot to transfer my data over to my new iPad, I've sent back the old iPad so how do I retrieve the data

Unless you have a backup, you don't.

You were supposed to have wiped the device before sending it back to Sky.

I guess it's a longshot but if you reject the trade in offer and ask for the device to be returned to you...
