Mobile data never worked in Vegas
Can anyone advise me if there an email address I can send Sky a message due to my data not working in Vegas ?

There is no email address that you can use to complain to as these are your options:
https://www.sky.com/help/articles/how-to-make-a-complaint
if you had a spend cap set did you try increasing this, did you make sure your device was set to abroad ?
Apple:
Settings > Mobile Data > SIM Applications > Make sure this is set to abroad.
Android:
Sky Menu App or SIM toolkit > Roaming > Make sure this is set to abroad.
