Changing SIM

If i buy a new iphone from sky with the free 100mb but I already have an existing contract with vodafone for another year, if my contract with vodafone expires and i want to have a contract with Sky for a SIM, will i be able to get a higher plan like 50GB with Sky or will I be forced by Sky to stick with the initial 100mb?

You can change the plan you have with Sky whenever you like as you just have to keep the Sky sim for at least 12 months as that is it's contract length.
