All networks recycle numbers (as there's a limited range).

I presume the previous user still has that number associated with their snap account after cancelling.  (Rather than 'hacked')

@Jamie365  The mobile number you have won't be brand new as there just isn't any new numbers, once a subscriber cancels their number with one provider it drops into the pool and it is then re-used.

Neither the number or the phone has been hacked.

If yoiu want a new number you'll need to cancel the current one if still within cool off period of 31 days and order a new esim., however the new number will still be a re-used number.

No not unless you've downloaded any dodgy apps?

Any normal user would not have the inclination to do so.

Your phone has not been hacked simply because the number you have was used by another person.

No - what usually happens is when you register an app/account with a phone number it sends a verification SMS to validate.  She can no longer do this for her account as the SMS will come to you.

I'm not sure if you can contact Snap for them to disassociate that phone number with her account.
