Not sure what you mean by Sky Stream app but there is the Sky Go app.

Can I set a "recording" for something when I'm not at home from Sky Go that will add to my playlist in Sky Stream or would I need to wait till I'm home.

This feature feels like a ral omission from the platform. I only switched back to Sky from Virgin yesterday, but it feels like Sky Stream just isn't fully prepared for launch yet with so many features like this missing.
