When you set this up you will have been shown and asked to save the recovery code so all you need to do now is to sign in with this as that will then turn 2FA off allowing you to update your phone number if you wish to use it again.
If you didn't make a note of the recovery code then I'm afraid you will have to go back to Sky and do not let them tell you then can not turn this offer for you, or to tell you to go to Yahoo (as they can not help with a Sky email account) as they can do this for you although it will take a while to be completed.
