Upgrade to full fibre

If we upgrade to full fibre would it be all done in one afternoon appointment and will the new router have a Ethernet socket

There's no guarantee of that: for underground provisioning it's often a two-stage process.

The two Sky Hubs suitable for FTTP both have four ethernet ports, but one of these ports is used for the link to the ONT

If it's in the UK, putting the address into the BT Wholesale Availability Checker should indicate which broadband provisioning type is applicable.
