Recently got Sky FTTP installed. Same problem is happening with me.
There is an update every week or so that happens overnight, and my Sky Hub (the black one - SR203) doesn't reconnect back to the internet. Additionally, the 'voice' light turns orange and all my phone lines disconnect. I have to manually reboot the router to get everything back up and running.
This is now starting to become a nightmare - when I'm not home or away for prolonged periods of time, my doorbell won't notify me of a ring and I won't be able to monitor my home cameras.
I did not have this issue with the old copper line (FTTC) using the same router model, and there was never any down time.
I have replaced the ethernet cables from the ONT box to the router, and also replaced the router with another SR203 - but no luck.
I am now stuck on what to do. I can potentially buy the Wifi Max white router which might fix the disconnection issues, but I've been told this is not compatible with Sky Q (I have the 2TB box and 2x Q Mini boxes).
To be honest, this is completely outrageous of Sky to rollout FTTP without the correct software on their routers to support. I've been having this issue for months now, hoping that one of their overnight firmware updates would solve this issue in the coming months.
In my opinion, this post requires Sky backend developer support to be looped in, so they can be made aware of this issue - if they are not aware already.
If I have to wait anymore, I might be needing to cancel after being a customer of 10 years.

Quick tip. Next time it happens, just pull the Ethernet out of the black router, and plug it back in. After a minute or so, all lights will be green again. Quicker than rebooting.
