I have a new Sky router, delvered two weeks ago, and an older Sky Router.
Both models are designed to implement sky's WiFi Mesh implementation.
I have set them up to work together with both using the same SSID and password. The new router 192.168.0.1 providing internet connection, DHCP from 192.168.0.3+. The old router is set with a static IP address of 192.168.0.2 with dhcp switched off. There is no physical connection betwqeen the two.
Now they "seem" to be working OK together, the second hub acting as a second wifi access point in another part of the house. So far so good. This setup is not how Sky designed them to work.
Question is, are they working as a WiFi MESH now with all the advantages a mesh system gives, or not?
Is there any way to tell?

I've always disputed that two units constitute a 'mesh', because a major point of a mesh is to permit packets to follow the most effective/efficient path and that requires at least three units. Describing pairs of devices as a 'mesh' is mostly a marketing trick to sell lower-cost bundles.
You've effectively got one gateway router with WiFi and one access point acting as a repeater which is also routing (and so creating a double-NAT for devices associated with it).

Ok, perhaps a bit more info will help here.
The system is:
The three above work as a Sky mesh WiFi
I have added in the old router ER115 in the configuration I described before.
So that makes 4 WiFi access points in total, all Sky, all using the same SSID, password and security settings, all theoretically Sky Mesh compatible
Question is, does adding the old Router ER115 in the way described (not as designed by Sky) still keep the Sky Mesh working as before, or have I in some way downgraded the system?
Is there some way of testing if I still have a Mesh?

Not that I'm aware of: AirTies software required to diagnose the 'mesh' is available, but the installer version is licenced only to Sky personnel and Sky don't offer the subscriber equivalent to users.

@TimmyBGood airties do The Airties Vision app is designed to work with recent Airties Wi-Fi products and does not support legacy Airties modems or repeaters. Currently supported products are Air 4960, Air 4960R, Air 4930 and Air 4920. These products are provided to you by your internet service provider. So it would depend which model above (if any) the sky mesh is
