My aged mother is moving into new accommodation. I want to setup broadband and TV for her, probably Sky Stream, but she also needs a landline. At her age using a mobile for everything won't work. Is this possible? Any advice? Thanks

Stream itself isn't broadband: it's a subscription television product.
All Sky Broadband come with a voice call service, but the default is an expensive pence per minute version. Adding either Sky Talk 'Evenings & Weekends Extra' or 'Anytime Extra' is advisable if you think any outbound calls are going to be made.

So if I got her Sky boradband and Stream for TV, would it come with a voip device as standard or do I need to ask? What about then phone number? Thanks.

Sky Talk Internet Calls is VoIP between the Hub and the outside world, but uses a normal analogue handset or DECT base station plugged into the Hub itself: note that internal telephone extension sockets within the property cease to function. Sky doesn't supply handsets: no ISP except BT does that because only BT was a telephone company for nearly a century before it became an ISP.
In theory the existing number transfers, but that's not entirely guaranteed and can cause distress if it doesn't happen.
