Hi there,
Is there a way to stop Sky sending text messages that I have unread voicemail? In particular, the ones that read:
"Hello. You've got X new voicemail messages . The last message was from X at 01:00 on 01/01/0000. To listen to messages, dial 759."
I get voicemail notifications via the phone app on iPhone and I feel like these texts messages are just a bit redundant for me.

Yes you can turn them off.
From your sky mobile, simply call the 759 number using the key pad, choose settings and then the option about how to be notified about voicemails and you can turn it off.
